Continuing on her latest gig, Eva Mendes was spotted hard at work on the New York City set of “Last Night” yesterday (November 7).

Though, the “We Own the Night” babe may have been feeling the pressure of sharing the screen with British babe Keira Knightley, as she was incessantly biting her nails and smiling nervously.

And when it comes to guys, the “Hitch” hottie says she prefers a man who doesn’t need to be the center of attention, which works out well with her boisterous personality.

“I think subtlety works best with me. I like that. I’m obviously not shy myself - I am Cuban so that makes me very loud. But I like it when a guy stands back a little and is a little mysterious and waits for the right moment.”

She’s made quite a name for herself with her diverse film roles, and earlier today Eva Mendes was hard at work on her latest project “Last Night.”

The “We Own the Night” hottie was spotted on the New York City set of the film, in which she stars alongside “Pirates of the Caribbean” babe Keira Knightley.

According to the film’s summary, it sounds like Miss Mendes is in for a steamy role this time around, not that it’s anything new to her.

Eva plays the colleague of a married man who happens to be attracted to her. And as they take a business trip together, they find themselves in the throes of temptation, while his wife (played by Knightley) has a little fun of her own as she encounters a past love.

Jessica Simpson stood up two dates on Tuesday night - boyfriend Tony Romo and … Elmo?

The singer - who designs clothing, shoes and handbags for Macy’s - was supposed to fly from Nashville to New York Tuesday to celebrate the department store’s 150th anniversary.

But driving rain caused serious flight delays, forcing Simpson to miss her scheduled Macy’s gig singing “Happy Birthday” with Elmo.

In fact the deparment store party - which included guests like Eva Mendes, Tommy Hilfiger and Martha Stewart - had nearly ended by the time Simpson finally arrived at 8:30 p.m.

“I’m so, so sorry!” she said as she rushed into Manhattan’s Gotham Hall with her B.F.F. hairstylist Ken Paves. “%26#91;I wish%26#93; I could be God and control the weather.”

But her injured NFL boyfriend, for one, was hoping she’d miss the event.

“Tony was just praying %26#91;that I wouldn’t make it out%26#93;,” Simpson admitted. “He had planned a really romantic date in case I didn’t make it %26#91;to New York%26#93; tonight.”

So what make’s the quarterback such a catch? “His heart!” she told PEOPLE.

Given her high-profile presence in the fashion industry, it’s no wonder Eva Mendes was all about checking out the action at Macy’s 150th Birthday Celebration last night (October 28).

The “We Own the Night” actress looked excited as she sauntered down the red carpet, sporting a sleeveless shiny red dress teamed with a pair of muted pink heels.

And with her status as an international sex symbol, the pressure is on for Miss Mendes to stay in great shape. Eva recently told press that she relies on exercise rather than diet to maintain her figure.

“I’m like every other girl across the globe - I love chocolate and I hate working out. But the truth is I have to do it. I like to eat. I cannot hold back. I cannot skip a meal. So I get into the gym; I do a lot of cardio then some light weight training. Weight is easy for me to put on, and I’m thankful that it’s pretty easy to take off.”

The PopCardz series will include stats such as the celeb’s favorite song, book, food, even their fears. “I’m afraid of the dark,” admits Jessica Biel on the back of her card.

Benefiting charities like The Art of Elysium and Multiple Sclerosis Research Center of New York, the cards, which run about three dollars per pack of five, will launch the first week of November. Select retailers will be listed on popcardz.com.

Adds Biel: “When I was a child these types of cards were geared towards the boys, so it is refreshing to see that PopCardz will appeal to both boys and girls.”

Former Saturday Night Live regular Jimmy Fallon and girlfriend Nancy Juvonen, a Hollywood producer who worked on Fallon’s 2005 romantic comedy Fever Pitch, were married Saturday on Necker Island in the Caribbean, a publicist announced.

Fallon, 33, and Juvonen, 40, had “family and close friends in attendance” at the ceremony, according to the statement from representative Ina Treciokas, the Associated Press reports. No further details were released.

“He presented her with a one-of-a-kind ring designed by Neil Lane,” the friend added.

It is a first marriage for both.

Fallon: ‘Coolest Girl in World’

The bride has been a close friend and producing partner of Drew Barrymore’s for more than a decade. This summer, Barrymore threw Juvonen a 40th birthday party, where guests included Eva Mendes, Kathy Griffin, Courtney Love, Jason Bateman and Fred Savage.

Movies that Juvonen has produced include 50 First Dates, Music and Lyrics, Charlie’s Angels and the upcoming He’s Just Not That Into You.

Fallon is being talked up as a possible Late Night successor to Conan O’Brien (who takes over NBC’s Tonight franchise in 2009). He left SNL in 2004, in 2004, but the following year he and Tina Fey staged an on-air reunion - and a mock custody battle over their supposed love child.

In October, Fallon was at no loss for words when it came to describing his then-bride-to-be, telling PEOPLE: “She’s the coolest girl in the world.”

Perhaps it’s because she recently tied the knot herself, but Ellen DeGeneres seemed to be in a romantic mood while interviewing Ryan Seacrest for Monday’s Ellen DeGeneres Show.

The new bride, 50, presses Seacrest, 33, on why he can’t seem to find love, according to excerpts of the show. On a helpful note, she comes up with a suggested date - Eva Mendes - and even offers to set him up with the actress.

“I want to know what love is?” says Seacrest, who at the end of last year told PEOPLE his goal for 2008 was to make time for a personal life.

“You’re calling me old,” interjects Seacrest.

“You’re getting old,” agrees DeGeneres. That’s when she takes out some photos to show him.

“They don’t know about this,” she says of the possible love interests she places before Seacrest, “but just as an idea of who would you choose out of these woman right here.”

Among the photos, besides Mendes’s, are those of Pamela Anderson, Britney Spears, Carrie Underwood and Jennifer Aniston.

Goes Right to Eva

“You have Eva,” points out Seacrest. “She’s gorgeous, and Jennifer is great, too.”

“You’re saying Eva Mendes, who you go to right away,” notes DeGeneres.

“Yeah, I kind of went there first,” says Seacrest. “I like Carrie, but then I kind of feel like she is part of Idol thing, so I don’t l know if that’s the right thing to do, to think about her in that way.”

Examining Spears’s photo, he says, “She looks like the sister (Jamie Lynn) there, because I was going to say she’s young and obviously there’s enough going on, and that’s not for me.”

As for Aniston, “I don’t know Jennifer,” says Seacrest.

Which brings DeGeneres back to Mendes. “I think she’s great,” concurs Seacrest. “What’s she like?”

“She’s great,” says DeGeneres. “Would you like me to set you up with her?”

He says, “Yeah.” She says, “Okay.”

On-screen, she’s every guy’s fantasy, but in real life Eva Mendes says she’s a girl’s girl.

“I don’t understand women who don’t like being with the girls,” the actress, 34, tells Marie Claire for its September issue. “They say they’d rather be with the guys all the time? That it’s just so much easier? I’m calling bull—- on that.”

After starring alongside such leading men as Will Smith, Joaquin Phoenix and Denzel Washington, Mendes says her upcoming role in The Women was a welcome change.

“Every morning I got up and thought, ‘I’m going to see Annette %26#91;Bening%26#93; today, I need to make sure she thinks I look cute,’” says Mendes. “Jada %26#91;Pinkett Smith%26#93;’s gonna be cute. Meg %26#91;Ryan%26#93;’s gonna be cute. I’d better be cute. I’m sure I sound like a ditz saying this, but it’s a girl thing. A timeless, ageless, ethnicity-less girl thing.”
